Description
Visit an authentic Apulian Masseria and find out how Mozzarella, Burrata, Caciocavallo and many other typical products of southern Italy are made. You will taste both fresh and seasoned cheeses, typical cold cuts and much more... all in complete relaxation. An experience that will make you learn about the history of a small farm and its great craftsmanship! The visit is usually carried out in English, in order to find a common language for our guests, but you can ask for some explanations in French, since our guide speaks French too. As the activity takes place on a farm and partially outdoors, it is advisable to wear closed shoes and suitable clothes for outer temperatures. Pets are welcome, except for the visit inside the mozzarella factory; we inform you that there are some pets on the farm.

A tale of the origins of the Masseria, what the historical term "Masseria" means and the ethics that accompany our supply chains; Discovering the stable with cows, calves and pigs. Visit to the milking parlor. All surrounded by the Fragni wood where animals are free to enter and live in freedom. Entrance to the Dairy with explanation of the production technologies of Cow Mozzarella, Burrata, Stracciatella and other typical Apulian cheeses. The Mastro Casaro will show the great dexterity and experience behind our entire supply chain. In the tasting, according to availability and tastes of the visitor, will be offered: Dairy products and cheeses: Mozzarella, Stracciatella or Burratina, Canestrato Pugliese, Caciocavallo and Giuncata or Ricotta. + jams or mustards; Cured meats: Capocollo, or Bacon and Salami. Baked products: Focaccia with tomato, Taralli or homemade bread and oil frize. Typical products: Fresh vegetables according to seasonal availability.

Fantastic! If you like cheese, you will love this tour! Full end to end explanation of the process from seeing the cows to sampling the cheese. Highly recommend! And the sampling was more like a full picnic lunch!
One of the best parts of our holiday! So authentic and lovely guides. Dont eat before hand as the cheese tasting provides a lot of food!

Booked for 4 of us to visit, so that was approx. £120. The guide Lucia was friendly enough, one of the family I think, but was constantly on her phone messaging people which was really rude. The group was too large and it was hard to hear over kids and people translating to family members. 30 people at £30/head is nearly a £1000 for a rubbish visit and they do this several times a day. We arrived, were shown a cow, in case we had never seen one before.., then a sad calf in a stinking hot calf pen, then a grotty milking parlour. We then got to the interesting bit making the mozzarella - this lasted maybe 10 minutes and then we were told the tour was over!! We sat down and were brought some meats and cheeses - no labels on them which would have improved the tasting experience - Lucia couldn't wait to clear off with her phone. I went into the little shop to try and buy some focaccia and jam (which we had tasted and was excellent). Nope they had none! Really rude woman in shop too. I bitterly regret wasting the £120 and would urge caution.
Great visit to a Masseria and to see dairy cheese production. The visit was informative and gave a good understanding into the different stages of the process. To finish we got to try the various cheeses, focaccia, tarelli, with wine and water. There is a so much food so come hungry. We ended up leaving quite a bit!
The cheeses at the end of the tour are divine and the explanation of how to make the various cheeses is also very interesting

Highly recommend this activity to anyone visiting the region. You’ll learn a lot about their operations without being overwhelmed with information. The staff is very accommodating to all guests, and dedicated to keeping the traditions of masserias alive.
