I took the sushi workshop at Kappodo, and the experience was perfect. The course is great for anyone with no sushi-making experience who wants to start learning or simply do something different during their trip. The instructor and the translator were very attentive; the explanations were detailed, and they provided specific feedback on how I could improve. I gained the foundational techniques needed to practice at home later. I recommend it to all types of travelers, whether in groups or solo. Thanks a lot, everyone! You will learn about Japanese kitchen knives and how to make Tamagoyaki, slice sashimi, and prepare nigiri, gunkan, and hosomaki. You will first watch the instructor and then practice the techniques yourself—starting with test dough and moving on to fish—while receiving feedback throughout the activity.

We love sushi, so this visit in Japan we bought a Japanese knife and were looking for a hands-on workshop for sushi preparation. We asked Gemini for the best sushi workshops in Tokyo and got 3 suggestions from which we chose “Tokyo Keen Japanese Knife and Sashimi Workshop”. We had this workshop in a beautiful space, well organized and equipped. First, the sushi chef talked about Japanese knife making and its origins. We got a demonstration on how to prepare Tamago and sashimi/ sushi fish slicing. Each of us got a prepared Tuna block which we sliced and were explained how to use correctly the knife and how to prepare the rice sushi base and combine it with the sliced fish. We also got 2 pieces of boiled shrimp and some salmon roe, which required a demonstration on how to prepare a “boat” for it. We had a great time learning how to prepare sushi and had a nice meal, that we prepared, with an extra miso soup, a glass of sake and green tea. There is much to practice...but I think that this was a good way to start. The chef and helper/translator were patient and very welcoming. I highly recommend this experience!

We asked Gemini for ***the best Japanese Sushi preparation class in Tokyo*** And we are VERY pleased with its recommendation. We went today for a 2 hours class - Tokyo Keen Japanese Knife and Sashimi Workshop - with the Chef and his assistant. During the class we heard first about the basics of forging the exquisite Japanese kitchen knives, and then had a patient guidance thru the phases of Sushi preparation, the proper way to hold a knife and allow it to slice the fish fillet without applying force, the preparation of the rice base and how to combine it with a fish. And at the end, when I ate the Sushi I prepared, I loved their taste. I don't feel "at home" in the kitchen. Not at all. Maybe today's workshop is a start of a new era for me :~)
