An Absolute Masterclass in Kyoto Before the official opening of Kyoto’s most anticipated sushi-ya, this preview cooking class was nothing short of revelatory. Under the watchful eye of a third-generation itamae, we didn’t just roll maki—we learned the shari (vinegared rice) temperature, the precise knife angles for hikarimono, and the spiritual weight of each gesture. The pace was unhurried, the instruction crystalline, and the flavours ethereal: that first bite of akami melted like cool silk against warm rice. Utterly brilliant. If this is the prelude, the restaurant itself will be legendary. 5/5 – reserved, radiant, and ruthlessly authentic.
