A must-do without hesitation! If you are passing through Bayonne or the Basque Country in general, you absolutely must stop by Pierre IBAIALDE! As soon as you pass through the door of the shop, you are immersed in the heart of the trade, and your nostrils will delight in the sweet smell of ham, suspended directly above your head! The visit lasts about an hour; the teams are smiling, kind, and especially passionate, which is felt every second. We had a great time discovering the history behind Pierre IBAIALDE. About history, anecdotes, manufacturing secrets, transparency about the company, and warnings to avoid being misled during large-scale purchases....! GREAT! After the visit, you will have the opportunity to taste the delicious products that are made on-site, and you can even leave with your hands full by passing through the shop right at the entrance. For the price, you really should not miss out on this activity; we will definitely place an order on their website in the coming months! It is a must-do, we learn interesting things. For those who love charcuterie, there are good smells of ham.
Superb small business in the city center. The staff is very dedicated. Six people work there. Only regional and natural products. The explanations are very detailed. Purchase possible vacuum-sealed. Long shelf life. I recommend this visit. Duration is about 40 to 45 minutes with a tasting.

Bonjour. Nous sommes navrés que la visite de notre atelier n'ait pas répondu à votre attente. Pourtant la visite de notre atelier, qui dure 45 minutes et qui est guidée et commentée, permet de voir, au même étage, le dernier saloir et le dernier séchoir de Bayonne ainsi qu'au rez de chaussée, notre étonnante salle d'affinage où 850 jambons peuvent être suspendus. Par contre, Il n'est pas possible pour des raisons sanitaires d'entrer dans le laboratoire de production. Nous espérons toutefois que la dégustation de notre jambon artisanal, de notre saucisson de porc à la purée de piment d'Espelette, et de notre pâté de canard à l'Espelette a égayé vos papilles !!
